about Volcan. All of their expressions are made with a Tahona. Also, when they make the expressions with a Tahona, they don't shred the agave first. They're one of the only brands that does it. They actually press the agaves whole, which is really inefficient, but delicious. Okay. It's also made at NOM 1523, no contract.

Only brand made there, which is great. Yes. Also, the guys at Volcan are super picky about their agave, like only, harvesting in the dry season. Yeah. Super, super ripe. High sugar levels. Also, speaking of particular, they use a natural water source for all of their tequila, which makes it extra delicious.

The one lie, and we've talked about this before about this brand, is that people always say, oh, they're like a big giant corporate brand. Yeah. And it's actually a family, a Mexican family, The Gallardo, has been around since the 1700's. That has a joint venture with Moët Hennessey, globally. So, yes, they've got some corporate support, but this is not Don Julio, this is not Diageo, this is not Cuervo, and they are doing things the right way.
