Inside Siete Leguas Tequila Ovens

Look at these beautiful uncooked agaves. What do they look like after cooking? Well, let's find out as they're opening oven #3 at Siete Leguas. Look at that steam! These have been cooked for a couple of days at 225 degrees. It's like making a brisket, but with agave. They got to cool down for another 12-24 hours before the juice can be extracted. These ovens are really large. You can't tell because of the steam, but here's Maddie in front of a nearly empty one, so you can see just how big they are. If you ever get a chance to visit Siete Leguas, you should absolutely do it.
